Easy Vegan Taquitos October 15th, 2011 0 Comments

Vegan Mexican Bean Taquitos

  • 1 can fat-free vegetarian refried beans
  • 1/2 can black beans
  • 1 tsp. chili
  • 1-2 TBS. minced onion
  • 2-3 TBS. salsa
  • 1 TBS. hot sauce if you care for heat
  • 12 corn tortillas

Preheat oven to 400 F.

Hand mix all ingredients.  Warm the tortillas in  microwave until they roll up easy.  Place about 2-3 TBS in the middle of each tortilla and roll them very tightly.  Sometimes I have to use a toothpick to hold them together if my tortillas are being a pain in my tush. Cook on a non-stick baking sheet for 12-15 minutes at 400 F, until cooked thoroughly. For extra crispiness, broil on high at the very end, for 1-2 minutes.  Serve with shredded lettuce, chopped tomato,  fresh avocado and dip in guacamole, plain soy yogurt, soy sour cream, or salsa.

Be careful.. I burnt my poor little mouth on those hot little yummy snacks tonight!  Owwie..beans will be hot on the inside of those little dudes.
