This months recipes are all about these 2 hearty ingredients…. January 3rd, 2012 0 Comments
yummm Spinach and Artichokes…
they go together like peanut butter and jelly… well, sort of, if you do it right!
Artichokes are a great source of fiber and Vitamin C, Spinach is a great source of Niacin, and a very good source of Dietary Fiber, Protein, Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Vitamin K, Thiamin, Riboflavin, Vitamin B6, Folate, Calcium, Iron, Magnesium, Phosphorus, Potassium, Zinc, Copper and Manganese–good stuff!!
When did you FIRST find the tasty combo of these 2 ingredients? I bet I could take a guess and it may have been in some dip form of the appetizer persuasion! Spinach artichoke dip is one the most ordered appetizers in the country…we adore that fatty concoction of cheeses and tangy veggies…. yet we don’t always know how to use it in other, healthier forms…
This month, stay tuned for many ways to use these 2 ingredients, in a healthy, low fat and vegan-ish way!
Spinach Artichoke Pasta Salad–Mediterranean Style
Spinach Artichoke Pizza– Italian Stlye
Spinach Artichoke Quesadillas- Mexican Style
Spinach Artichoke Brownies— just kidding, I was making sure you were still with me
